Scones (Basic)

Ingredients

all-purpose flour (sifted together) to taste
baking powder (sifted together) to taste
baking soda (sifted together) to taste
salt (sifted together) to taste
dried cranberries to taste
chocolate chips to taste
frozen butter (cut into small pieces) to taste
eggs (shelled) to taste
yogurt to taste
sugar to taste
fresh milk (for brushing surface) a pinch

Instructions

1

Mix dry ingredients

Combine the all-purpose flour with the baking powder, baking soda, and salt, sift together into a mixing bowl, then add the dried cranberries and chocolate chips.

2

Prepare wet ingredients

Cut the frozen butter into small pieces. Crack the eggs into another mixing bowl, add the yogurt and sugar, and mix until well combined.

3

Cut in the butter

Add the butter to the flour and use a pastry cutter to cut it into fine crumbs. You can also use your hands, a fork, or a knife.

4

Form the dough

Pour the yogurt mixture into the flour and use a rubber spatula to bring the dough together into a ball—do not overmix, or the gluten will develop. Transfer the dough to a floured surface, divide it into two portions, dust the tops with a little flour to prevent sticking, then shape each into a round.

5

Shape the dough

Dust a rolling pin with flour and lightly roll or press the dough out to about 1 cm thick. You can also flatten it with the palms of your hands, but be sure to dust your hands with flour to prevent sticking.

6

Cut and finish

Cut the dough from the center along the diameter into 8–10 wedges, arrange them neatly on a baking sheet spaced about 1–1.5 cm apart, and brush the tops with a little fresh milk.

7

Bake

Place in a preheated oven and bake at 185°C for about 20 minutes.
