Secret Recipe Char Siu

Story

This dish offers a tender texture and rich aroma, perfect for slicing or enjoying directly as a flavorful main.

Ingredients

Pork front leg meat 1000g
Light soy sauce a little
Sugar to taste
Char siu sauce 2 tbsp
Dark soy sauce a little
Salt to taste
Sand ginger a little
Cooking wine a few drops
Ginger a few slices
Green onion sections 2 stalks
Garlic a little

Instructions

1

Step 1

Prepare the ingredients, remove the skin from the meat; it tastes best with a mix of fat and lean,

2

Step 2

Cut the meat into large chunks

3

Step 3

Mince the sand ginger and garlic

4

Step 4

Add some light soy sauce, cooking wine, scallion sections, and a little salt to the cut meat; mix well and marinate for a while

5

Step 5

The minced sand ginger and garlic

6

Step 6

Heat up the wok with more oil, and deep-fry the meat until both sides are slightly yellow,

7

Step 7

Take it out when it is about done

8

Step 8

Drain the oil

9

Step 9

Leave a little oil in the pot, slightly more than for regular stir-frying; add the minced ginger and garlic to fragrance

10

Step 10

Pour in the meat and stir-fry evenly; add char siu sauce, light soy sauce, dark soy sauce, chicken essence, salt, and sugar—add a bit more for flavor, so it tastes slightly sweet and salty

11

Step 11

Then add clear water to just barely cover the meat; simmer over medium-low heat until the sauce is slightly thickened; do not cook it too soft, or it will be greasy and not refreshing

12

Step 12

Really like it

13

Step 13

If in large chunks, slice as you eat; if in small chunks, eat directly
