Sesame Flatbread Sandwich with Meat
Ordinary sesame flatbread becomes far more delicious when filled with a homemade meat patty. The flatbread is soft yet chewy, and the patty adds hearty, balanced flavor. A great choice for breakfast or a quick, simple dinner.

Place all ingredients into a bowl.

Knead into a smooth dough, cover with a damp cloth, and place in a warm, humid spot to ferment.

When the dough has grown to 2.5 times its original size, lift the damp cloth to check.

Lift the dough to see long strands and even, fine air pockets.
Step 5
Remove the dough, place it on a kneading mat, degas it, and shape it into a round.

Weigh and divide into 8 equal portions, then shape each into a round.

Use a wool brush dipped in water to lightly coat the surface of each dough ball.

Pick up the dough from the bottom and press the top into a plate of white sesame seeds, gently pressing down.

Once the dough surface is coated with sesame seeds, gently shake off the excess.

Repeat the process with all dough portions. Lightly oil a flat griddle, and place the prepared flatbread dough pieces into the pan as you go, with the sesame-free side facing down first.

Once the bottom is set and lightly browned, flip the flatbread and continue cooking over low heat until the other side is browned.

Flip the flatbread again, keep the heat low, pour in a small cup of water, cover with a lid, and steam for 3–4 minutes.

When you hear a sizzling sound and the water has evaporated, open the lid to release the steam. Once the flatbread surface is dry, it is ready to serve.

The finished small flatbreads are round, cute, fluffy, and springy.
