Sesame Oil Chicken
Chicken is steamed until tender, then deep-fried until crisp, and served with a sauce made from chicken giblets, spinach, and other seasonings.

Steamed tender chicken (deboned and shredded into strips)

Step 1
Slice the giblets and blanch them in boiling water. Cut the spinach into segments.

In a bowl, combine the soy sauce, vinegar, sugar, salt, starch, MSG, scallion, garlic, and cooking wine with the giblets, spinach, and wood ear mushrooms to make a sauce.

Heat oil in a wok until about 70% hot. Add the chicken and fry until thoroughly cooked, then remove. Shred the meat into strips and arrange on a plate. Pour the sauce into the wok, cook until done, drizzle with sesame oil, and pour over the chicken. Serve.
