A signature Min (Fujian) cuisine dish featuring stone frog meat coated in starch and fried until crispy, garnished with cherry peppers, and finished with rich sesame oil.

Sesame Oil Frog Legs

Ingredients

frog (cleaned, legs reserved, deboned) 20 pieces
dry starch (for coating) 10g
green bell pepper (cut into leaf shapes for garnish) 2 pieces
red cherry (for garnish) 2 pieces
green cherry (for garnish) 2 pieces
sesame oil (for frying) appropriate amount
MSG (for marinating) small amount
scallion (for marinating) small amount
ginger (for marinating) small amount

Instructions

Prepare the frog

Clean the frogs, reserve the legs and remove the bones, add MSG, scallion and ginger to marinate, then coat with dry starch and set aside

Frying

Heat the pot, add sesame oil, when the oil is hot, put in the frog legs and fry until cooked through

Plating

Take out and arrange on a plate, cut the green bell pepper into leaf shapes, and use together with red and green cherries as garnish
