Fujian-style sesame oil stone frog: frog legs are marinated, battered, and deep-fried in sesame oil until crisp on the outside and tender within, finished with a light vegetable garnish.

Sesame Oil Stone Frog

Ingredients

Stone frog (cleaned, keep legs and debone) 20
Dry starch (for coating) 10 g
Green pepper (cut into leaf shape for garnish) a pinch
Red cherry tomato (for garnish) 2
Green cherry tomato (for garnish) 2
Sesame oil (for frying) to taste
MSG (monosodium glutamate) a pinch
Scallion a pinch
Ginger a pinch

Instructions

Marinate and Coat

Clean the stone frogs, keep the legs and remove the bones. Marinate with MSG, scallion, and ginger, then coat with dry starch and set aside.

Fry

Heat a wok and add sesame oil. Once the oil is hot, add the stone frog legs and fry until cooked through, then remove and plate.

Garnish

Cut the green pepper into leaf shapes and use them together with the red and green cherry tomatoes as a garnish.
