Sesame Paste Abalone

Ingredients

Dry abalone (soaked until soft, stewed until tender, sliced into large pieces, expanded with alkaline water) 250 g
Sesame paste 50 g
Salt 3 g
Edible alkali (made into warm alkaline water for expansion) 15 g
Chopped cilantro 15 g
MSG 3 g
Cooking wine 10 g
Chicken broth 500 g

Instructions

1

Step 1

Soak the dry abalone in warm water until soft. Place it in an aluminum pot, add water, and heat. Once the abalone is stewed until tender over low heat, remove it and slice it into large pieces. Place the slices in a bowl and add warm alkaline water until the abalone slices shine and expand, becoming thick and pale yellow. Remove them, rinse in cold water to wash away the alkaline taste, then transfer to a pot of boiling water to blanch thoroughly. Remove and drain off the water.

Step 2

Place the chicken broth in a wok, add salt, MSG, and cooking wine to season, then add the abalone slices. When the soup comes to a boil, skim off the foam. Reduce to low heat and drizzle in the sesame paste (thinned with oil). Once the soup reduces to a thin flowing consistency, transfer to a bowl and sprinkle with chopped cilantro.
