Ingredients

Seville bitter oranges 1 lb (480 g)
Sugar 3 lb (1440 g)
Water 3 pints (1.8 L)
Lemon 1/2

Instructions

1

Preparation

Wash and dry the oranges, then cut them in half. Remove the seeds and place them in a muslin bag.

2

Slicing

Slice or chop the pulp and place it in the preserving pan together with the seed bag.

3

Simmering

Bring to a boil and cook until the peel is soft and the contents have reduced by about half, approximately 1.5–2 hours.

4

Removing the seeds

Remove the muslin bag with the seeds.

5

Adding sugar

Stir in the sugar until dissolved, then bring to a rapid boil until the setting point is reached.

6

Potting

Allow to cool slightly so the marmalade thickens, then pot up and seal.
