Instructions

1

Prepare Ingredients

Cut poached duck breast and winter bamboo shoots into 1 cm cubes, halve the shiitake mushrooms, cut ham into strips 5 cm long, 0.5 cm wide, 0.1 cm thick. Blanch soaked shiitake mushrooms and winter bamboo shoots in broth.

2

Make the Shou Character

Take a flat plate and grease its surface. Beat egg white into a soft meringue, spread it on the plate to form a 15 cm diameter, 1 cm thick circle. Arrange ham strips on top to form the Chinese character 'Shou' (meaning longevity), steam over low heat for 2 minutes, then remove.

3

Make the Soup

Add the three-ingredient broth, duck cubes, bamboo shoot cubes, shiitake mushrooms, cooking wine, and refined salt to a pot. Bring to a boil, skim off any surface foam, pour into a soup bowl, gently push the steamed 'Shou' character into the bowl, and serve.
