Ingredients

potato starch 125 g (4 oz)
all-purpose flour 125 g (4 oz)
baking powder 1 tsp
salt 1/4 tsp
softened unsalted butter 250 g (8 oz)
granulated sugar 250 g (8 oz)
eggs 4
milk 2 tbsp
vanilla extract 1 tsp
pure chocolate (melted and set aside) 90 g (3 oz)
cocoa powder (mixed with 2 tbsp boiling water) 2 tbsp
chocolate ganache (for decoration, see page 136) 1/2 portion

Instructions

1

Step 1

Sift flour, potato starch, baking powder, and salt together twice and set aside.

2

Step 2

Cream butter and sugar together until light and slightly fluffy. Mix eggs, milk, and vanilla extract thoroughly, then add to the butter mixture gradually. Fold in one quarter of the sifted dry ingredients at a time.

3

Step 3

Scoop half of the batter into prepared molds with a spoon. Stir melted chocolate and cocoa powder into the remaining half of the batter, then scoop this chocolate batter into the molds as well. Swirl in a circular motion to create a marble pattern.

4

Step 4

Place the cake in a preheated oven and bake for 1 hour, or until the texture is firm. Cool the cake in the mold for about 10 minutes, then transfer it to a wire rack to cool completely.

Step 5

Once the cooled cake is moved onto parchment paper, wait until the chocolate ganache cools to a pourable consistency (it should coat the back of a spoon). Pour the ganache over the top of the cake, letting it drip down the sides. Let stand until the chocolate hardens.
