Shrimp Balls in Superior Soup

Ingredients

fresh shrimp 275 g
MSG 40 g
tapioca starch 40 g
fine salt a pinch

Instructions

1

Step 1

Remove the heads, tails, and shells from the shrimp, wash with salt, wrap in a clean white cloth, and squeeze out the water. Lay clean paper on the counter, place the shrimp on top, and squeeze once more to remove any remaining moisture. Add MSG, salt, and tapioca starch, and knead until soft. Place in the refrigerator and freeze for 1 hour before removing (it will not be crispy if not frozen).

Step 2

Form the shrimp meat into balls and drop into boiling water to cook (the water must not boil up into bubbles, otherwise the balls will be too tough). When the shrimp balls float to the surface, remove immediately and place in a bowl filled with fresh soup.
