Chocolate Mousse

A classic French chocolate mousse made with dark chocolate, egg yolks, and whipped egg whites, served chilled.

Chocolate Mousse

Ingredients

Dark chocolate (broken into small pieces) 200 g
Eggs (use very fresh ones, separate yolks and whites) 6
Powdered sugar 70 g
Salt a pinch

Melting Chocolate

Break the chocolate into small pieces. Prepare a water bath: heat half a pot of water in a pot over medium-high heat until it simmers. Place the chocolate in a bowl, add 1 tbsp of water, and place the bowl over the pot to melt on low heat. Make sure the water does not boil.

Mixing Yolks

Separate the egg yolks and whites. Remove the bowl of melted chocolate from heat and stir with a spoon. Mix the egg yolks with sugar, then pour into the melted chocolate and combine well.

Whipping Egg Whites

Add salt to the egg whites and whip with a whisk until stiff peaks form.

Mixing and Chilling

Gently fold the whipped egg whites into the chocolate-yolk mixture with a spatula to avoid deflating. Cover with plastic wrap and refrigerate for about 2 hours. Serve cold. Tip: You can add 1 tbsp of cognac or rum for flavor, or serve with ladyfinger cookies.
