Chinese Yam Cold Cake
A sweet, refreshing, and nutritious summer dessert made from Chinese yam paste simmered with agar and chilled until set.

Chinese yam (washed, steamed until tender, peeled and mashed into a paste)

green plum (for garnish)

red cherry (for garnish)

agar (referred to as 冻粉 in the original, washed)

Prepare the Yam
Wash the Chinese yam, steam it until cooked through, peel it, and mash it into a smooth paste.

Cook and Shape
Wash the agar, place it in an aluminum pot, add the water and sugar, and bring it to a gentle boil until the agar has fully dissolved. Strain the liquid and return it to the pot, then stir in the yam paste. Bring the mixture back to a boil and pour it into an enameled tray to set.

Chill and Garnish
Let the mixture cool to room temperature, then transfer to the refrigerator until fully chilled and firm. To serve, cut into diamond-shaped pieces and arrange on a plate. Top each piece with one green plum and one red cherry for garnish.
