Prepare the Pea Shoots
Place the pea shoots in a wok and dry-toast, add some oil and ginger wine, then add boiling water (to remove any off-odor). Pour into a colander and drain off the water.
Stir-fry the Pea Shoots
Heat 0.5 tbsp oil in a wok over medium-low heat, return the pea shoots to the wok, and toss to combine.
Stir-fry the Shrimp and Plate Over the Pea Shoots
Heat 0.5 tbsp oil in a wok over medium-low heat, add the shrimp and stir-fry until just cooked, then pour into a colander to drain off excess oil. Return the wok to the stove, splash in the Shaoxing wine, pour in the superior stock, season with fine salt and MSG, sprinkle with white pepper, and thicken with wet cornstarch. Add the shrimp back into the wok, stir in the sesame oil until evenly coated, then plate the shrimp over the pea shoots.
