Lemon Steamed Black Pomfret

Ingredients

Black pomfret (scaled and gutted, with belly scraped clean) 1 (about 500 g)
Lemon (sliced and juiced) 3
Garlic cloves (minced) 2
Celery (leaves removed, finely diced) a pinch
Red pepper strips a pinch
Cilantro (roots removed and washed, separated into small sprigs) 1
Soy sauce 2 tsp
Sugar 1 tsp
Ground pepper a pinch

Instructions

1

Prepare ingredients and marinate

Slice and juice the lemon (about 1 tsp of juice). Mince the garlic. Remove the leaves from the celery and finely dice. Remove the roots from the cilantro, wash, and separate into small sprigs. Mix the lemon juice with soy sauce, sugar, and ground pepper (the sugar must be fully dissolved). Scale and gut the fish, scraping the belly clean. Coat with the mixed seasoning, place on an oiled plate, and arrange the lemon slices on top of the fish.

2

Steam and finish with sauce

Bring the water in the steamer to a rolling boil, place the fish inside and steam over high heat for 9 minutes, pour off the steaming liquid, then sprinkle with the celery and cilantro while hot and drizzle with the boiling oil and light soy sauce.
