Shrimp Stock
Concentrated fresh shrimp-flavored stock, made by simmering gray shrimp and straining the liquid, used to season sauces or dishes.
Ingredients
gray shrimp
to taste
water
12 cl
Instructions

Boil the shrimp
Wash the gray shrimp and place them in a pot. Add 12 cl of water, bring to a boil, then keep at a gentle simmer for 20 minutes.

Steep
Remove from the heat and steep for 10 minutes.

Strain
Strain the shrimp through a fine cheesecloth to obtain 10 cl of shrimp stock.

Reduce
Continue to reduce the shrimp stock down to 5 cl.
