Silver Thread Rolls
Silver Thread Rolls are a steamed wheat dim sum made by filling fermented wheat dough with sweetened fatty pork lard filling, rolling it thin, cutting into fine strands, rolling into shape, and steaming until fully cooked.

Make the fat-sugar-oil filling
Wash the pork back fat thoroughly, mince it into a fine paste, place in a bowl, add the caster sugar and fine salt, mix well to make the fat-sugar-oil filling.
Mix the dough and ferment
Pour cold water into a bowl. First crumble the starter dough and add it in, then add the flour and mix together until smooth, and let it ferment naturally. When the dough has risen to about eighty percent, take it out, place on a board, add the dissolved baking soda, knead evenly, then roll into a long strip.
Roll out the dough and spread the filling
Use a rolling pin to roll the strip into a sheet about 0.66 cm thick, 50 cm long, and 40 cm wide, then evenly spread the sugar-oil filling on it. First fold the outer-side skin inward by one-third.
