Wood Ear Mushroom Porridge

Simmer the soaked black fungus and jujubes with rinsed japonica rice to make a porridge. Traditionally believed to nourish yin and moisten the lungs.

Wood Ear Mushroom Porridge

Ingredients

Black fungus (or white fungus) 5 g
Red dates (jujubes) 5
Japonica rice 100 g
Rock sugar to taste

Instructions

Step 1

Soak the black fungus (or white fungus) in warm water until rehydrated, trim off and discard the tough stems, rinse away any impurities, and tear into small pieces. Rinse the japonica rice until the water runs clear and wash the red dates. Place everything together into a pot and add an appropriate amount of water.

Step 2

Place the pot over high heat and bring to a boil. Reduce to low heat and simmer gently until the black fungus (or white fungus) is completely tender and the rice has broken down into a smooth porridge. Stir in the rock sugar until dissolved and serve.
