A beloved staple of Korean home cooking, this warming dish is prepared by slow-cooking chicken for two full hours in a savory, aromatic blend of soy sauce, nutty sesame oil, and piquant chili powder, until the meat is impossibly tender and infused with deep, well-balanced flavors that strike the perfect balance of savory, nutty, and gently spicy notes.

Ingredients

chicken (washed, drained, cut into 3 cm square small pieces) 1000 g
soy sauce 125 g
sesame oil 40 g
garlic 15 g
chili powder 0.5 g
scallion 15 g
refined salt 2 g
pickled vegetables (to be served with the dish) 50 g

Prepare the Chicken

Rinse the chicken, drain thoroughly, cut into 3 cm square pieces, sized to be one bite per piece.

Braising

Place the chicken pieces in a large pot, add soy sauce, sesame oil, garlic, chili powder, scallion and salt, stir to mix evenly. Bring to a rolling boil over high heat, then reduce to low heat and braise and simmer for 2 hours, until the chicken pieces are fully tender.

When serving, eat alongside hot steamed rice and pickled vegetables.
