Ingredients

pork (washed, diced, coated with wet starch and salt) 500g
carrot (washed, diced) to taste
cooking oil 500g (actual consumption 50g)
sesame oil 2 tablespoons
soy sauce 3 tablespoons
Shaoxing wine 2 tablespoons
sweet bean sauce 2 tablespoons
refined salt 1 teaspoon
white sugar 3 tablespoons
MSG 2 teaspoons
starch (for thickening sauce) as needed
water (for thickening sauce) as needed

Instructions

Ingredient preparation

Wash the pork, cut into small cubes, coat with wet starch and salt; wash the carrot, cut into small cubes.

Velveting pork cubes

Place a small amount of oil in the pot, slide the pork cubes in the oil until fully cooked, then remove; put the carrot cubes into the hot oil and deep-fry until cooked.

Preparing starch slurry

Mix the sweet bean sauce, soy sauce, white sugar, salt, MSG, cooking wine, starch and water into a uniform starch slurry.

Final stir-fry

Place the wok over heat, heat the sesame oil until hot, add the prepared starch slurry, stir continuously until the sauce thickens; add the carrot cubes and pork cubes, stir-fry evenly, then it is ready.
