Experience the delightful balance of sweet and sour in this traditional Chinese condiment. By first curing the cloves in a vinegar brine and then simmering them in a savory soy sauce mixture, this recipe transforms simple fresh garlic into a highly palatable and flavorful pantry staple.

Ingredients

garlic (washed, peeled, and drained) to taste
white vinegar (for making vinegar brine) 2 cups
salt (for making vinegar brine) 0.5 cups
water (for making vinegar brine) 5 cups
soy sauce (for making salt soy sauce) 1 cup
vinegar (for making salt soy sauce) 0.5 cups
white sugar (for making salt soy sauce) 0.8 cups

Instructions

Step 1

Wash the garlic, peel, and drain off the moisture. Pour water and vinegar over the garlic heads, and place in a cool place to marinate for 10 days.

Pour water and seasonings (salt, soy sauce) into a pot and cook for 3 minutes. After it comes to a boil, cook for 1 minute.

Discard the white vinegar water previously used to marinate the garlic. Place the garlic into a jar, and pour the cooked seasonings over the garlic while hot.

After one week, boil it once more. Let it cool down, then pour it into the garlic. After another week, boil it once more.
