Small Cone-Shaped Chocolate
Spread untempered dark chocolate into thin sheets and chill until firm. Holding the tip of a knife steady, shave in a circular motion to form small cones.
Ingredients
Dark chocolate (untempered)
120 g
Instructions
1
Prepare chocolate sheets
As described on page 44, spread about 120g of chocolate into thin sheets on an iron tray. Refrigerate until firm, then return to room temperature and set aside.
2
Shave into cones
Press your left middle finger against the blade about one-third of the way from the tip, and your right thumb against the handle about one-third of the way down. With this grip you can shave chocolate between the two fingers. Rotating your right hand 90 degrees produces a cone-shaped curl. When starting out, it helps to keep your right hand slightly higher than your left.
