Soft-Fried Shrimp Cake

Ingredients

Fresh shrimp (peeled, deveined, washed, and minced into fine pieces) 500 g
Chicken breast (pounded into a paste) 50 g
Pork fat (pounded into a paste) 100 g
Lettuce (for garnishing the plate edge) 50 g
Green onion (for making scallion sauce) 10 g
Egg white 25 g
Bean starch (for making wet bean starch and fine dry bean starch) 50 g
Refined salt 5 g
Salt and pepper mix (for serving on the side) 25 g
Ground white pepper 1 g
Wheat paste (for making scallion sauce) 10 g
Sesame oil (for drizzling) 1 g

Prepare Ingredients

Fresh shrimp peeled, deveined, washed, and minced into fine pieces. Chicken breast and pork fat are pounded into pastes separately.

Make the Cake Base

Add egg white, wet bean starch, salt, and cold stock to prepare the chicken mixture, then add cooking wine and ground white pepper, mix thoroughly with the minced shrimp, transfer to a plate and smooth the surface, steam over medium heat until just set (approximately 5 minutes).

Cut and Coat with Starch

Let cool completely, then cut into wide strips, coat each strip with a layer of fine dry bean starch.

Deep Fry

Heat lard in a pan over medium heat to 150-180°C, add the shrimp cake strips, fry until fully cooked through and just golden, remove, drizzle with sesame oil and arrange on a serving plate.

Plate and Serve

Garnish with lettuce and scallion sauce, serve with the salt and pepper mix on the side.
