Soft-Simmered Pearl-Curtain Fish

Thinly sliced fish fillets are layered with minced meat filling and steamed into a pearl-curtain shape, then drizzled with a sweet, sour, and mildly spicy sauce.

Ingredients

Cucumber fish (washed, head and tail removed and reserved, central bone removed, sliced into page-like pieces, half minced) 1.5
Water chestnuts (mixed into the fish paste) 5 g
Fat pork (diced) 2.5 g
Egg whites (beaten into a gel, used as a coating) 3
Starch (mixed into a paste for coating) 5 g
Greens 3
Egg yolks (original text reads 'xun huang') a pinch
Cilantro a pinch
Scallion whites a pinch
Chili pepper a pinch
Garlic cloves a pinch
Sugar 5 g

Instructions

Preparing the fish

Wash the cucumber fish and remove the head and tail (reserve them); discard the central bone. Slice one half of the fish diagonally into thin page-like pieces and marinate with the seasonings until ready to use.

Making the fish paste

Mince the other half of the fish into a paste, add egg whites, salt, MSG, and so on, and beat into a gel-like consistency. Mix in the water chestnuts and diced fat pork until evenly combined.

Rolling and steaming

Then roll the paste into each page-like slice of fish to form pearl-curtain shapes. Coat the surface with egg whites and starch paste, garnish with cilantro and egg yolk, and steam in a steamer for 10 minutes until cooked through.
