Soy-braised Duck Gizzards
Duck gizzards are cleaned, then steamed with red yeast rice powder and braising sauce, chilled, and sliced for a rich, mellow flavor.

Instructions
Step 1
Tear off the fat membrane from the duck gizzards, rinse them thoroughly, remove the yellow skin inside, and blanch in boiling water. When the gizzards change from red to gray-brown, remove them and rinse off the blood foam with cold water. Place them in a bowl and mix well with the red yeast rice powder.
Step 2
Then add the chicken broth, salt, sugar, cooking wine, soy sauce, and star anise. Steam until the gizzards are fully cooked, then remove from the steamer. Strain the broth through a fine sieve, then return the gizzards to soak in it so they absorb the flavor and do not dry out.
Step 3
Once the gizzards have cooled, place them in the refrigerator to chill for 5-6 hours. Just before serving, slice the gizzards thinly.
