Soy Sauce Braised Spanish Mackerel

Ingredients

Spanish mackerel 2 fish
Garlic to taste
Ginger to taste
Scallion to taste
White liquor 5 g
Chicken essence to taste
Sugar 8 g
Mature vinegar 8 g
Five-spice powder 1 small spoon
Light soy sauce 10 g
Dark soy sauce 2 g
Oyster sauce 1 spoon

Instructions

Step 1

Clean the Spanish mackerel and drain off the water.

Cut the Spanish mackerel into thick slices, about 1.5 cm.

Grecoat a non-stick pan with ginger slices first, heat vegetable oil in the pan, and add the fish slices to pan-fry.

Pan-fry until both sides are golden yellow.

Place all the fish in the pot, add an appropriate amount of white sugar, ginger, green onion, and garlic; when the temperature is high, pour in high-proof white liquor and aged vinegar.

Add dark soy sauce, light soy sauce, and oyster sauce, add an appropriate amount of clear water, cover the pot, bring to a boil over high heat, then simmer over low heat.

Add an appropriate amount of salt and five-spice powder midway; finally, reduce the sauce over high heat, leaving some sauce inside for better taste. Turn off the heat and add chicken essence; it is ready.
