Soybean and Chestnut Pig Trotter Stew

Ingredients

Soybeans (soaked in water for 2 hours) 30g
Pig trotters (cut into large pieces and blanched) 500g
Ginger (sliced) 1 piece
Water 2500ml
Rice wine 3 tbsp
Chinese yam (Huai Shan) 3g
Goji berries 1 tbsp
Dried tangerine peel 3g
Chestnuts 70g
Salt a pinch

Instructions

Step 1

Soak the soybeans in water for 2 hours; cut the pig trotters into large pieces and blanch them; slice the ginger.

Step 2

In a stockpot, combine the water, rice wine, sliced ginger, Chinese yam, goji berries, dried tangerine peel, and pig trotters. Bring to a boil over high heat, then cover and simmer on low heat for 1 hour.

Step 3

Add the soybeans and chestnuts and continue to simmer on low heat for 1 hour. Season with salt before serving.
