Ingredients

butternut squash (peeled, seeded and cubed) 3 pounds
milk 3/4 cup
butter (melted) 6 tablespoons
eggs (beaten) 3
vanilla extract 1/2 teaspoon
sugar 3/4 cup
all-purpose flour 3 tablespoons
ground cinnamon 1/2 teaspoon
ground cloves 1/8 teaspoon
ground nutmeg 1/8 teaspoon
crushed vanilla wafers 1/2 cup (about 15 wafers)
packed brown sugar 1/4 cup
butter (melted) 2 tablespoons

Instructions

Cook squash

Place squash in a large saucepan or Dutch oven; add water to cover. Bring to a boil; cover and cook for 25-30 minutes until tender. Drain and place in a mixing bowl; mash until smooth.

Mix batter

Add milk, butter, eggs, and vanilla extract; stir until well blended. Combine dry ingredients; add to squash mixture and stir until well blended. Transfer to a greased 2-quart baking dish.

Cover and bake at 350° for 45 minutes. Meanwhile, combine ingredients in a small bowl to make a crumbly topping; sprinkle over squash.

Uncover and bake 12-15 minutes more until heated through.
