Spelt Wheat and Walnut Bread

Ingredients

Spelt whole wheat flour 1400 g
Bread flour 600 g
Levain 600 g
Fresh yeast 8 g
Malt 40 g
Salt 65 g
Water 1400 g
Spelt whole wheat grains (soaked in water for 3 hours) 500 g
Walnuts 600 g
Water (for soaking the grains) 1360 g

Instructions

Knead the dough

Mix all ingredients (except the spelt whole wheat grains, walnuts, and salt) and knead into a dough.

Add the salt

Add the salt only 5 minutes before the end of mixing.

Add the grains and walnuts

Once all the ingredients are combined, add the spelt whole wheat grains and walnuts, and mix at low speed until fully incorporated.

Shape the loaves

After proofing, shape the dough into small bundles and place them on a proofing cloth.

Bake

When the bread is fully proofed, lightly dust the top with black rye flour, then bake and apply steam according to the instructions. After 15 minutes of baking, open the steam vent and continue baking until done.
