Spiced Milk Tea (Chai)

Story

This cozy, aromatic spiced milk tea draws on traditional South Asian chai roots, blending warm spices for a deeply comforting sip perfect for cool days or quiet, relaxing moments.

Ingredients

water 4 cups
cardamom pods (crushed) 6
cloves (whole) 4
fennel seeds 1 teaspoon
loose-leaf black tea (Assam or Darjeeling preferred; place in tea infuser, or 4 tea bags (remove strings)) ¼ cup
sugar 2 teaspoons
cinnamon stick 1 inch
fresh ginger (very thin) 1 slice
cumin powder 一小撮
whole or 2% milk 4杯

Instructions

Boil Water

In a large stew pot, bring the water to a rolling boil over high heat

Boil Spices

Place the cardamom pods, cloves, and fennel seeds in a large tea ball, or wrap them in a 6-inch square of coarse cheesecloth and tie into a bag with kitchen twine. Submerge the spice-filled tea ball in the water, then add tea, sugar, cinnamon, ginger, and cumin. Boil over medium heat for 10 minutes

Add Milk

Pour in the milk and bring to a boil again. Watch carefully to prevent overflow. Remove and discard the tea leaves and spices

Serve

Spoon the milk tea into cups. Cover the pot and keep the remaining milk tea warm on the stove until finished drinking (up to 1 hour)
