Score the chicken breast into a 0.3 cm cross-hatch pattern, then cut into 1.5 cm cubes. Place in a bowl, add 20 g wet cornstarch, salt, and 5 g cooking wine, and mix well. Combine soy sauce, 5 g cooking wine, sugar, vinegar, broth, 5 g wet cornstarch, and MSG to make the sauce.
