Spicy Diced Chicken

Ingredients

Spring chicken (cut into 1cm cubes) 200 g
Green bamboo shoots (cut into dice) 100 g
Pickled chili peppers (finely chopped, set aside) 25 g
Lard 60 g
Soy sauce 20 g
Cooking wine 20 g
MSG 3 g
Salt 3 g
White sugar 15 g
Wet starch (for coating the chicken) 20 g
Vinegar 5 g
Scallions (50g total with ginger and garlic, sliced) to taste
Ginger (sliced) to taste
Garlic (sliced) to taste
Broth (for mixing the sauce) a pinch

Instructions

Marinate the Chicken

Cut the spring chicken into 1cm cubes, mix well with a pinch of salt, soy sauce, and cooking wine, coat with wet starch, then toss with a little oil.

Prepare the Ingredients

Cut the green bamboo shoots into dice. Slice the ginger and garlic. Finely chop the pickled chili peppers and set aside. Combine the broth, scallions, ginger, garlic, cooking wine, soy sauce, sugar, wet starch, and MSG to make a slightly sweet sauce.

Stir-fry

Heat a wok over high heat and add the lard; once the oil is hot, add the chicken and stir-fry until cooked through.
