Spicy Diced Lamb (La Zi Rou)

Spicy Diced Lamb (La Zi Rou)

Ingredients

fatty lamb 100 g
lean lamb 300 g
soaked bamboo shoots 50 g
egg white 1
cornstarch slurry to taste
clear oil 750 g (uses about 100 g)
chili powder 25 g
soy sauce to taste
salt to taste
Sichuan pepper water to taste
MSG to taste
diced scallion to taste
minced garlic to taste

Prepare the ingredients

Cut the fatty and lean lamb into small dice. Mix with soy sauce, salt, Sichuan pepper water, and MSG until the seasonings are absorbed. Coat with egg white and cornstarch slurry. Cut the bamboo shoots into dice.

Blanch in oil

Pour 750 g of clear oil into a wok and heat to about 60% hot. Add the diced lamb and stir to separate the pieces. Add the diced bamboo shoots, give it a quick pass through the oil, then pour everything into a strainer to drain off the oil.

Stir-fry and finish

Leave a small amount of oil in the wok and heat it. Add scallion, garlic, and chili powder and stir-fry until fragrant. Add the diced lamb and toss evenly to coat. Drizzle with a little bright oil, plate, and serve.
