This dish transforms simple fatty pork into crispy, golden nuggets of flavor. By rendering the fat slowly, you create delicious 'cracklings' (oil residue) which are then stir-fried with plenty of garlic and chili for a punchy, addictive side dish or condiment.

Prep the Pork
Wash the pork belly thoroughly. Slice the meat into strips first, then cut them into small cubes, roughly 3 centimeters wide.
Render the Fat
Place the pork cubes into a cold wok or pan. Turn on the heat to medium and let the fat begin to render out. Once the meat starts releasing oil, lower the heat and simmer slowly until the cubes turn golden brown and crispy.
Fry Aromatics
Use a slotted spoon to remove the crispy pork cracklings, leaving the rendered lard in the pan. Finely chop the garlic and slice the chilies. Sauté them in the hot lard until fragrant.
Combine and Season
Toss the crispy pork cracklings back into the pan with the garlic and chilies. Add the soy sauce and a pinch of salt. Stir-fry quickly for a minute to coat everything evenly, then serve hot.
