Chinese Toon Egg Pancakes

Story

Chinese toon (xiangchun) has a unique, pungent aroma that pairs perfectly with eggs. Briefly blanching the leaves softens their texture and removes any excess bitterness.

Ingredients

Fresh Chinese toon leaves 100g
Eggs 3 large
All-purpose flour 50g
Water 3 tbsp
Salt 1/2 tsp
Cooking oil as needed

Prepare the Toon Leaves

Rinse the toon leaves thoroughly. Bring a pot of water to a boil, add a pinch of salt, and blanch the leaves for about 30 seconds. Drain immediately and squeeze out excess water.

Chop and Mix

Finely chop the blanched toon leaves. Crack the eggs into a bowl, add the flour, water, and salt. Whisk until smooth, then stir in the chopped leaves.

Cook the Pancakes

Heat a lightly oiled frying pan over medium heat. Pour in a ladle of the batter and spread it into a thin circle. Fry until the bottom is golden brown, then flip and cook the other side until set. Repeat for remaining batter.
