Ingredients

ramen or soba noodles 200g
kimchi, chopped 1 cup
chicken or vegetable broth 4 cups
gochujang (Korean chili paste) 2 tablespoons
soy sauce 1 tablespoon
garlic, minced 3 cloves
ginger, grated 1 teaspoon
sesame oil 1 tablespoon
soft-boiled eggs 2
green onions, sliced 2 stalks
sesame seeds for garnish

Build the broth

Heat sesame oil in a large pot over medium heat. Add minced garlic and grated ginger, stirring until fragrant, about 1 minute. Pour in the broth and bring to a gentle simmer.

Season and add kimchi

Stir in the gochujang and soy sauce until well combined. Add the chopped kimchi and let everything simmer for 10 minutes to allow the flavors to meld together.
