Spicy Peanut and Edamame
"Autumn is peak season for fresh peanuts and edamame. Boiled peanuts and edamame are not only delicious but also highly nutritious. Peanuts contain amino acids and vitamin E, which can support memory, nourish the skin, and help delay aging. Their vitamin C helps lower cholesterol and may aid in the prevention of arteriosclerosis, hypertension, and coronary heart disease. Peanuts are also credited with moistening the lungs, resolving phlegm, promoting urination, and reducing swelling. They provide plant-based protein along with high levels of potassium and magnesium, as well as vitamins and dietary fiber."
