garlic (washed and sliced) 5 cloves
ginger (washed and sliced) 1 small piece
stock 5 tbsp
Sichuan peppercorn powder 2 tsp

Instructions

1

Prep Ingredients

Cut the rabbit meat into strips; wash the green onion, garlic, and ginger, and slice them.

2

Stir-Fry

Heat the wok, add the chicken fat, and once it reaches about 60% hot, add the green onion, garlic, and ginger. Stir-fry until fragrant, then add the rabbit strips, chili paste, Sichuan peppercorn powder, and soy sauce and stir-fry together.

Braise and Thicken

Once it comes to a boil, skim off the foam, simmer over low heat until the meat is tender and the sauce is thick, then add the MSG and sesame oil, and thicken with a cornstarch slurry.
