Spicy Red Pepper Tomato Arugula Pizza

Ingredients

tomato sauce 6 tbsp
pizza base 1 large (or 2 small)
low-fat mozzarella cheese (sliced, use vegan alternative for strict vegans) 225 g (8 oz)
red bell pepper (seeded and sliced) 1
cherry tomatoes (halved) 100 g (4 oz)
canned roasted eggplant (drained) 285 g canned
arugula (for garnish) to taste

Instructions

Prepare the pizza

Place a large baking sheet in the oven and preheat the oven to 220°C (200°C for fan mode). Spread the tomato sauce over the pizza base, then top with mozzarella, red bell pepper, cherry tomatoes, and roasted eggplant. Drizzle with a little of the oil from the canned eggplant, then transfer the pizza directly onto the preheated baking sheet.

Bake for 10-12 minutes until the pizza is crispy, then sprinkle with arugula leaves and serve.
