Steamed Cod with Sweet Potato Mash
Steamed cod served with sweet sweet potato purée and finished with a light tomato vinaigrette.

Make tomato vinaigrette and sweet potato mash
Place the green onions, garlic, tomatoes, sugar, and lemon zest in a bowl, stir in the olive oil, tomato juice, and basil leaves, and season to taste. Place the sweet potatoes in a steamer and steam for 15–20 minutes until soft, mash, then stir in the fresh cream, season with nutmeg, salt, and pepper, and keep warm.

Steam the cod
Season the cod and steam in the steamer for 5–6 minutes until the flesh turns white and opaque. Place a spoonful of sweet potato mash in the center of a plate, set the cod on top, and drizzle with the tomato vinaigrette to serve.
