Story

This soul-warming soup brings together tender morsels of pork and chicken with an medley of vegetables that soften beautifully during the simmer. The taro adds a creamy, slightly sweet undertone that pairs wonderfully with the savory broth.

Ingredients

pork loin 200g, cut into 2cm cubes
chicken breast 200g, cut into 2cm cubes
shiitake mushrooms 5 fresh, stems removed and halved
taro 1 small (about 150g), peeled and cut into chunks
carrot 1 medium, peeled and cut into chunks
yellow onion 1 medium, sliced
fresh ginger 3 thin slices
light soy sauce 2 tablespoons
vegetable oil 2 tablespoons
water 1.5 liters
salt to taste
green onions for garnish

Prepare your ingredients

Cut the pork loin and chicken breast into uniform 2cm cubes. Remove stems from shiitake mushrooms and halve them. Peel the taro and carrot, then cut into generous chunks. Slice the yellow onion and set aside your ginger slices.

Sauté the aromatics and meat

Heat vegetable oil in a large pot over medium-high heat until shimmering. Add the onion slices and ginger, stirring until fragrant and slightly softened, about 2 minutes. Add the pork and chicken cubes, drizzle with soy sauce, and cook, stirring occasionally, until the meats lose their pink color.

Build the broth

Pour in the water and bring to a rolling boil. Add the taro chunks and carrot pieces, then reduce heat to medium-low. Let everything simmer gently for 25-30 minutes, until the taro is tender when pierced and the broth has developed rich flavor.

Finish and serve

Taste the broth and adjust seasoning with salt as needed. The vegetables should be soft and the meats perfectly cooked through. Ladle into bowls, garnish with chopped green onions, and serve hot.
