Squid in Chocolate Sauce

Squid in Chocolate Sauce

Ingredients

squid 750 g
olive oil 3 tbsp
garlic 2 cloves
sliced almonds 25 g
large sweet onion, finely chopped 1
bay leaf 1
dried thyme 1/2 tsp
white sweet wine 250 ml
tomatoes, peeled and chopped 4
saffron a pinch
dark plain chocolate, chopped 15 g
chopped parsley 2 tbsp
salt and freshly ground black pepper to taste

Prepare the squid

Process the squid: hold the body firmly and pull out the head and tentacles; cut off the tentacles and set aside, then pull out the long quill and all the cartilage-like innards from the body and discard them. Rinse the body under running water, slice it into rings, and cut the tentacles into small pieces.

Cook the squid

Heat 2 tbsp of the oil in a wok, add the garlic and almonds and stir-fry until lightly golden, then transfer to a mortar. Pour the remaining oil into the wok, soften the onion, then add the squid, bay leaf, and thyme. Once the squid is no longer translucent, pour in the sweet wine and let it reduce slightly, then stir in the tomatoes, salt, and pepper. Cover and simmer gently until the squid is tender, about 1 hour.

Finish with chocolate and parsley

Pound the almonds, garlic, and saffron together in the mortar, loosen the paste with a little of the cooking liquid, then stir it into the squid. Add the chocolate and let everything heat through until the sauce thickens, then fold in the parsley. Serve with boiled new potatoes so they can soak up the sauce.
