Steamed Chicken with Five Seeds

Ingredients

fresh young hen (slaughtered and cleaned) 1 (about 750 g)
lotus seeds (peeled and pitted) 20
goji berries (washed) 10
red dates (washed) 10
pine nuts (washed) 10
schisandra berries (washed) 10
Shaoxing wine (for cooking chicken) 30 g
scallions (for cooking chicken) 25 g
ginger (for cooking chicken) 25 g
fine salt (for seasoning) 7.5 g

Instructions

1

Blanching

Slaughter and clean the fresh hen, then place in a pot to blanch. Add scallions, ginger, and Shaoxing wine. Once boiling, skim off the foam. Cook until the blood runs clear, then remove the chicken. Strain the broth and set aside for later use.

2

Preparing the Five Seeds

Peel and pit the lotus seeds. Wash the goji berries, red dates, pine nuts, and schisandra berries.

3

Assembling the Chicken

Split the chicken along the backbone and remove the large bones (long triangular shape). Place it into a serving pot, add the five seeds, pour in the strained broth, add fine salt, seal with plastic wrap, and cover with a lid.

4

Steaming

Place the covered serving pot into a steamer and steam over high heat for 3 hours until very tender. Remove, take off the lid at the table, and peel away the sealing paper before serving.
