1

Marinate the chicken

Slice the chicken breast and pork fat thinly and place in a bowl. Add the fine salt, soy sauce, Shaoxing wine, sugar, sweet bean sauce, MSG, shredded scallion, shredded ginger, sand ginger powder, star anise powder, clove powder, and white pepper. Mix well and marinate briefly.

2

Coat the mixture

Add the egg white and pork lard and mix well, then add the fried rice powder and mix until evenly combined. Set aside.

3

Wrap and steam

Blanch the lotus leaves in boiling water, rinse with cold water, drain, and cut into 10 small pieces. Divide the marinated chicken and pork fat into 10 portions and wrap each portion in a lotus leaf to form 10 rectangular packets. Steam over high heat for about 15 minutes until cooked through.

4

Serve

Brush the outside of each lotus leaf wrap with sesame oil and serve on a plate as is.
