Prepare ingredients
Wash the bok choy, blanch and chop finely; knead the flour into dough for making dumplings; wash the scallion whites and ginger, chop a small amount of scallion into fine pieces, cut the rest into segments, cut some ginger into large slices, and pound the broken pieces into ginger juice
Prepare the whole chicken
Place the whole chicken in a pot of boiling water to scald, remove, rinse with cold water and drain. Then stuff goji berries, notoginseng slices, ginger slices and scallion segments into the chicken cavity. Put the chicken back into the pot, pour in clear broth, add ground white pepper and Shaoxing wine. Sprinkle notoginseng powder over the chicken breast, seal the opening with wet tissue paper, and steam over high heat for 1 hour.
Prepare dumpling filling
Mix the minced meat with salt, ground pepper, Shaoxing wine, ginger juice and a small amount of water to make filling, then add the chopped bok choy and mix well. Divide the dough into 20 portions, and wrap each portion into small dumplings.
Steam chicken and cook dumplings
When the chicken is done steaming, boil water to cook the dumplings. At the same time, take the chicken out of the steamer, remove the tissue paper, add chicken bouillon powder to taste. Once the dumplings are cooked, scoop them into the serving bowl and serve.
