Story

This classic Chinese home-style dish combines the delicate texture of steamed eggs with savory ground pork and soft tofu. The key is achieving that smooth, custard-like texture while letting the pork topping add bold flavor.

Ingredients

silken tofu 200g, cubed
ground pork 100g
eggs 3 large
ginger 1 small piece, minced
green onion 2 stalks, sliced
light soy sauce 2 tablespoons
sesame oil 1 teaspoon
vegetable oil 1 tablespoon
salt pinch
water 150ml

Beat and season the eggs

Crack eggs into a bowl and beat gently. Add a pinch of salt and the water, then whisk until well combined. The water helps create a silky, tender texture.

Add tofu and steam

Gently fold the tofu cubes into the egg mixture. Pour everything into a heatproof bowl or plate. Steam over medium-high heat for about 10 minutes until set but still jiggly.

Cook the pork topping

While the eggs steam, heat vegetable oil in a pan. Add ginger and cook for 30 seconds until fragrant. Add the ground pork and stir-fry until cooked through, breaking it up as it cooks. Add soy sauce and sesame oil, then remove from heat.

Serve hot

Carefully remove the steamed egg from the pot. Spoon the cooked pork mixture over the top. Garnish with sliced green onions and drizzle with a little extra sesame oil if desired. Serve immediately while hot.
