Beat and season the eggs
Crack eggs into a bowl and beat gently. Add a pinch of salt and the water, then whisk until well combined. The water helps create a silky, tender texture.
Add tofu and steam
Gently fold the tofu cubes into the egg mixture. Pour everything into a heatproof bowl or plate. Steam over medium-high heat for about 10 minutes until set but still jiggly.
Cook the pork topping
