1

Prepare the Ingredients

Slaughter the hen, remove all feathers and innards, blanch briefly in a pot of boiling water, then rinse with cold water. Slice the ham, shiitake mushrooms, scallion, and ginger.

2

Pre-cook the Ginseng

Soak the ginseng in water until soft, then steam it in a steamer for 30 minutes. Remove and set aside.

3

Steam the Dish

Place the hen in a large bowl and add the ginseng, ham slices, bamboo shoot slices, shiitake slices, scallion slices, ginger slices, salt, cooking wine, monosodium glutamate, and chicken broth. Place the bowl in a steamer and cook over high heat until the chicken is completely tender.

Plate and Sauce

Transfer the steamed chicken to a serving bowl. Arrange the chopped ginseng, ham slices, bamboo shoot slices, and shiitake slices on top of the chicken (discard the scallion and ginger). Pour the steaming broth into a ladle, bring it to a boil over direct heat, skim off the foam, adjust the seasoning, and pour it over the chicken to serve.
