Lotus root 100g
Egg 1
Ginger 10g
Cooking wine 1 tbsp
Salt 1 tsp
Sugar 1/2 tsp
Scallions 2 stalks

Rinse the lotus root thoroughly and mince it into small pieces, keeping some texture rather than making a puree. Finely mince the pork and the fresh ginger.

Combine the minced pork, lotus root, and ginger in a mixing bowl. Add the egg, salt, cooking wine, and sugar. Mix vigorously in one direction until the mixture becomes sticky and well-combined.
