Steamed Pork with Rice Powder

Ingredients

Pork belly block (cut into strips 10 cm long, 5 cm wide, 2 cm thick) 500 g
Rice (fried until pale yellow then ground into powder) 500 g
Fresh lotus leaves (washed and briefly blanched) 4
Soybean paste 25 g
Salt 5 g
Soy sauce 15 g
Sugar 25 g
Sesame oil 50 g
Shredded scallion 5 g
Shredded ginger 5 g
Cooking wine 10 g
MSG 5 g
Caramel color 5 g
Star anise 2 g
Fennel 2 g
Roasted sesame powder to taste

Prepare the pork strips and rice powder

Wash the pork belly and soak for 2 hours. Remove and scrape off any hairs or impurities from the skin with a knife, then cut into strips 10 cm long, 5 cm wide, and 2 cm thick. Mix the rice evenly with star anise and fennel in an iron wok, stir-fry until pale yellow, then grind into a powder and set aside.

Marinate

Place the pork strips in a ceramic bowl. Add the salt, soy sauce, cooking wine, soybean paste, caramel color, sugar, shredded scallion, shredded ginger, sesame oil, and MSG. Mix well to marinate and absorb the flavors, then sprinkle evenly with the rice powder and toss to coat.

Wrap

Wash the fresh lotus leaves and blanch briefly in boiling water. After cooling, wrap each pork strip in order and arrange them neatly in a bowl.

Steam

Place the bowl of wrapped pork in a steamer over high heat and steam for about one hour until tender and falling apart. Remove from the steamer, transfer to a serving dish, and sprinkle with roasted sesame powder before serving.
