Prepare the fillings
Season the ground meat with a pinch of salt. Crack the eggs into a bowl and lightly beat. Tear the washed greens into small pieces.
Fill and roll the noodles
Lay a rice noodle sheet flat on a clean surface. Spread a portion of the seasoned ground meat, a drizzle of beaten egg, and a few pieces of greens across the center. Carefully roll the sheet up tightly around the fillings, pressing the edges to seal.
Steam the rolls
Place the rolled noodles seam-side down in a steamer. Steam over high heat for about 8–10 minutes, until the filling is cooked through and the noodles are translucent and tender.
Serve
Remove from the steamer, let cool slightly, and cut into bite-sized pieces. Serve warm with soy sauce or your favorite dipping sauce.
